Hassel Back Potatoes

These potatoes are the new thing, taking British homes by storm. The perfect side dish to go with your Christmas roast. These trendy roast potatoes originated in a restaurant in Stockholm. They involve slicing into the potato to create slits, but making sure not to cut right through the potato. They are well worth the effort! A sprinkling of Pecorino cheese and breadcrumbs makes them extra crispy.

Ingredients

  • Baking potatoes
  • 3 tablespoons butter, melted
  • salt and pepper to taste
  • 3 tablespoons finely grated Pecorino Romano cheese
  • 3 tablespoon dried breadcrumbs
  • 2 bulbs of garlic

Start by peeling the potatoes, this is optional you can also leave the skin on for a crispier finish. Slice ridges into the potato but make sure you don’t cut all the way through. Finely chop garlic and add to the ridges in the potatoes spread half of the butter over the potatoes salt and pepper, then add the bread crumbs and cheese.

Bake the potatoes for 40 minutes on gas mark 7 / 220 C. remove from oven and add the rest of the butter to the spuds, add more cheese (optional) and place back in the oven for an additional 20 minutes until golden brown.
